Five Years of Galaxies was a painting depicting Darth Vader's head, Luke Skywalker on a Tauntaun, Han Solo embracing Leia Organa, C-3PO, R2-D2, and some X-wing starfighters. It was made to commemorate some sort of saga called Star Wars.
The painting included some text in the High Galactic alphabet, including Star Wars—the title of what was being commemorated—as well as a list of ambiguous names, possibly entertainers within the saga being noted. The painting seemed to speculate that the Empire would "strike back." This was quite ominous, given that the Empire did in fact strike back during the Battle of Hoth, years after the painting was created.
One of many paintings and other pieces of art available in the galaxy, Five Years of Galaxies was most prevalent during the Galactic Civil War between the Galactic Empire and the Alliance to Restore the Republic. It appeared some time after the Battle of Yavin, which took place in 0 BBY and was a pivotal conflict in the war. Leia and Vader issued these paintings, alongside Six Years of Galaxies and various medals, during the festivities of Remembrance Day and Empire Day, respectively.

This painting was only given out to players for the fifth year anniversary of Star Wars Galaxies, during the Empire Day live event of 2008.
This painting is actually the theatrical poster for Star Wars: Episode V The Empire Strikes Back, a 1980 movie made by George Lucas as the fifth chronological installment of Star Wars.
Unlike most of the other theatrical posters in the game, Five Years of Galaxies is not named after its movie counterpart, The Empire Strikes Back.
