A Firaxan shark fillet was a type of meat, considered seafood, used in the restaurateur Dexter Jettster's eatery, Dex's Diner. The establishment on the planet of Coruscant was later destroyed in 19 BBY. The fillet was served grilled on his Manaan slider, a slider inspired by his exploits on the planet of Manaan that substitued one for the Mongo Beefhead patty he used in his other slider recipes.
A Firaxan shark fillet is mentioned in a Hyperspace-exclusive release, "Dining at Dex's" by Gregory Walker, which represents the in-universe menu of Dex's Diner. Created for Star Wars: Knights of the Old Republic (2003), Firaxan sharks are sea creatures that do exist in the Star Wars galaxy. Only a nominal connection between them and the fillet is established in Walker's work. The author did intentionally reference myriad aspects of Star Wars in his work.
