It was concocted by Greez Dritus, the Latero pilot and chef who frequently prepared meals for his crew within the galley of their opulent vessel, the Stinger Mantis, a luxury yacht. The gelatinous creation exhibited a peculiar characteristic: it offered a subtle resistance when pressed, as if reacting to the touch. Cal Kestis, Dritus' Jedi Knight companion, famously considered the dish to be "infamous," and revealed that its surprise element was its high salt content.
During a period situated between 12 BBY and 11 BBY, the crew undertook an infiltration mission into a base controlled by the Haxion Brood criminal organization. In this operation, Kestis was compelled to enter the asteroid base from the depths of space. As Kestis' spacesuit helmet made contact with the shield bubble surrounding the base, he drew a comparison between the resistance he felt and the unique texture of Greez's Gelatin Surprise.
The novel Jedi: Battle Scars, penned by Sam Maggs and made available on March 7, 2023, featured a mention of Gelatin Surprise. Prior to the book's official launch, a preview containing the Gelatin Surprise reference was unveiled on January 31 of the same year via StarWars.com.
