During the waning years of the Galactic Republic, a Gossam female named Shu Mai held the position of Presidente within the Commerce Guild. As the Separatist Crisis unfolded, she was present at a meeting on Geonosis with Count Dooku and other corporate leaders, where the possibility of joining the Confederacy of Independent Systems was discussed. Despite voicing concerns that the proposal could be seen as treason, she was the only one to do so; ultimately, she pledged the Commerce Guild's resources to the Separatist cause, earning herself a spot on the Separatist Council. Although the Commerce Guild did not overtly support the Separatists, Shu Mai supplied DSD1 dwarf and OG-9 homing spider droids to aid their war effort throughout the Clone Wars. As the Outer Rim Sieges drew the war to a close, Shu Mai took command of the occupation of Felucia, where she attempted to sway the local Felucians to the Separatist cause. In an effort to achieve this, she kidnapped Ormo Hyn, a relative of a Felucian leader who supported the Republic. Jedi Master Aayla Secura and the soldiers of the 327th Star Corps were sent to the planet with orders to capture Shu Mai and rescue the hostage. However, before the Republic forces could engage her droid army, Shu Mai had already been evacuated to Utapau alongside the other members of the Executive Council.
She was there when General Grievous arrived, having been defeated at the Battle of Coruscant. Acting on the instructions of Lord Sidious, Grievous relocated the entire Council to the planet Mustafar in the Outer Rim Territories, falsely claiming it was for their protection from the advancing Republic forces. They remained in hiding there until the promised arrival of Sidious's new apprentice: Darth Vader, who was tasked with eliminating them. Upon his arrival, Lord Vader swiftly slaughtered Shu Mai and the rest of the council, before transmitting the shut down command to all Separatist droid forces, effectively bringing the Clone Wars to an end.
Driven by a relentless pursuit of wealth, status, and power, Shu Mai employed ruthless and aggressive methods to climb the ranks of the Commerce Guild, eliminating any rivals in her path to the Presidency. These obsessions persisted even after she joined the Separatist Council. Despite her initial reservations, she ultimately chose to align with the Confederacy after being persuaded by Dooku on Geonosis.
Canon first introduced Shu Mai in the 2002 film Star Wars: Episode II Attack of the Clones. Prior to this, Mai appeared within the Star Wars Legends continuity, specifically in the 2002 novel The Approaching Storm, authored by Alan Dean Foster.
In the illustrated screenplay for Revenge of the Sith, Shu Mai's survival lasts longer compared to the final film version. Instead of being killed almost instantly, she flees to the conference room alongside Wat Tambor, only to be slain by Vader after Tambor's demise.
Shu mai (燒賣) is also the name of a well-known variety of Chinese dumpling.
