Dok-Ondar was an Ithorian male collector who managed an antiquities shop situated in Black Spire Outpost on the planet Batuu, which lies on the fringe of the Outer Rim Territories. A widespread rumor suggested that he was open to trading any treasure, provided the offered price was acceptable.

Born into a family of gardeners, Dok-Ondar's passion for collecting and unearthing bones, peculiar rocks, and other oddities began while assisting his parents in their garden. His parents, supportive of his interests, enabled him to cultivate trading and entrepreneurial skills, transforming his collecting into a profession. Tragically, they were murdered in a mysterious incident after uncovering archaeological secrets connected to the Jedi and Sith.
In 10 BBY, Dok-Ondar was aboard First Light, the yacht of Crimson Dawn crime lord Dryden Vos, during a meeting between Vos, Tobias Beckett, and Han Solo. Qi'ra, Vos's leading lieutenant, ensured Dok-Ondar received proper attention.
Later, Dok-Ondar journeyed to Jabba the Hutt's Palace on Tatooine, witnessing Jabba reprimanding Greedo for failing to capture a crucial target on Mygeeto. Dok-Ondar ultimately saved the Rodian bounty hunter's life by offering to purchase Ki-Adi-Mundi's lightsaber, which Greedo had obtained during his unsuccessful mission and was desperately trying to trade to Jabba for his life, along with the dianoga pup he had intended to buy, doubling the price.

During the early days of the Galactic Empire's control over Jedha, Dok-Ondar hired Captain Hondo Ohnaka and accompanied him on a mission to retrieve a Kyber crystal statue from the Temple of the Kyber. Dok-Ondar, Ohnaka, and his apprentice Quadoro entered the temple, where they faced several Guardians of the Whills. Despite the Guardians' presence, Dok-Ondar managed to seize a statue by using Mundi's lightsaber to detach it. As they exited, they were confronted by Chirrut Îmwe. Dok-Ondar persuaded Îmwe to allow their departure with the statue. He and Ohnaka successfully boarded their shuttle and navigated past the Imperial blockade.

Prior to the Battle of Yavin, Dok-Ondar, an antiquities dealer based on Batuu, contracted Solo to acquire some infant sarlaccs from Genzhor, a renowned holo scientist and sarlacc keeper, on the planet I'vorcia Prime. Upon arriving at the reserve, Solo discovered that Dr. Genzhor had been murdered by his assistant, Ooris, who pushed him into a sarlacc pit, attempted to swindle Solo, and tried to steal his ship, the Millennium Falcon. Following the events on I'vorcia Prime, Solo reunited with Dok-Ondar, returning with an infant sarlacc. Dok-Ondar expressed dissatisfaction with the outcome, as there was only one sarlacc, but Han falsely claimed that the reserve only contained one.
During the Galactic Civil War, Dok-Ondar hired a group of individuals and accompanied Dr. Chelli Lona Aphra and her crew to Moraband aboard his vessel. Dok-Ondar's objective on Moraband was to retrieve the Sword of Khashyun from a Sith Temple. Dok-Ondar observed as Aphra and his muscle, a group of Shistavanens, ventured into the temple. When 0-0-0 tried to assassinate him, Dok-Ondar and his remaining man dismantled 0-0-0. He confronted Aphra after she and BT-1 recovered the sword. Dok-Ondar fired an EMP at BT-1 and refused to relinquish the sword to her. Aphra declined to hand over the sword and instructed BT-1 to eliminate his last muscle. Dok-Ondar fired at Aphra, splitting the sword in two. As he attempted to reclaim the sword, which was now embedded in the ground, he noticed 0-0-0 rebooting and decided to salvage what he could, claiming one half and abandoning Aphra with the other. Dok-Ondar left her and her droids stranded on Moraband, later regretting his decision to split the sword.
At one point, Remex Io, a Clawdite who had rejoined his crew led by female human Kendoh Voss, spoke with Dok-Ondar in Black Spire Outpost on Batuu. Dok-Ondar expressed disappointment at the crew's tardiness, caused by the First Order's presence, which forced Io to take a circuitous route through an alley. During the meeting, Wooro, another member of Voss' crew, spotted an infant sarlacc. Dok-Ondar recounted the story of Solo smuggling them from a reserve on I'vorcia Prime, but Voss quickly shifted the focus to showing Dok-Ondar what she intended to sell. Upon seeing a lightsaber displayed on the screen, Dok-Ondar demanded their immediate departure. His assistant inquired about how the weapon had been acquired, and Dok-Ondar emphasized the importance of preventing it from falling into the wrong hands.
Subsequently, the First Order arrived at Dok-Ondar's establishment to investigate the lightsaber he possessed. A stormtrooper sergeant threatened Dok-Ondar, warning that his items could be reclassified as contraband and destroyed, and that owning a lightsaber could once again be deemed a crime. After the stormtroopers departed, Dok-Ondar informed his assistant and translator Tohago of his plan to relocate the hilt to a secure location to prevent the First Order from discovering it.
Later, Dok-Ondar dispatched his Clawdite enforcer Varg to intercept Io. Varg incapacitated Io and impersonated him to infiltrate the Kendooh Gang. Dok-Ondar then eavesdropped on a conversation between Voss and Hondo Ohnaka, with whom he was secretly allied. Voss revealed a portion of her plan to Ohnaka, attempting to hire him as a pilot, unaware of his connection to Dok-Ondar. However, when Voss revealed the cargo, the Sword of Khashyun, Dok-Ondar was enraged to see Ohnaka disclose his knowledge of the sword to Voss.
Ohnaka sought out Dok-Ondar to share his information, but his loud rambling in the street prompted Dok-Ondar to silence him, cautioning him about the prevalence of spies in the area. After bringing him inside, Ohnaka relayed his knowledge, unaware that they were being monitored by a cam droid operated by the Kendoh Gang. Dok-Ondar recounted the mission he and Aphra undertook on Moraband to Ohnaka, and when Ohnaka requested further details, Dok-Ondar suggested continuing the discussion at the safe house, expressing his intention to move the hilt to Ohnaka's ship before it could be stolen. At that moment, Voss and Wooro entered the den with the intention of stealing the hilt. However, Dok-Ondar activated his primary security droid BK-86, coinciding with the arrival of a group of stormtroopers outside.
The stormtroopers entered, aiming their blasters at Dok-Ondar, Tohago, BK-86, Voss, and Wooro. After assaulting Wooro and striking Voss on the chin with a blaster, the stormtroopers interrogated Voss about her intentions on Batuu, suspecting her of being affiliated with the Resistance. Voss improvised, eventually passing the hilt to Wooro, who unknowingly handed it to Varg, believing him to be Io. Varg returned the hilt to Dok-Ondar, who then contacted Voss via hologram to reveal himself as the benefactor who had hired them. Dok-Ondar informed them that he could not allow them to sell the blade and instead attempted to unite the two pieces. Upon successfully doing so, he informed the crew that their payment was safe passage off the planet, revealing that he had anonymously tipped off the First Order regarding their location, providing them with enough time to escape.
Dok-Ondar was known to be somewhat temperamental, yet he was willing to offer valuable items to customers who negotiated favorable deals with him. Dok's reputation on Batuu and beyond made him a respected and often feared figure within the black market and collecting community. Anyone who dared to cheat him would be placed on his enemies list, known locally as the "Doklist," and become the target of bounty hunters. Dok-Ondar also served as an unofficial banker for Black Spire Outpost, collaborating with Oga Garra to track debts owed to both of them, with Oga's crew assisting in enforcing these debts.

During the Walt Disney Parks and Resorts panel at the D23 Expo on July 16, 2017, Dok-Ondar was announced as a character who would appear in the upcoming theme park land Star Wars: Galaxy's Edge. These themed lands opened in 2019, initially at Disneyland in Anaheim, California, and subsequently at Walt Disney World in Orlando, Florida.
Dok-Ondar is represented by an animatronic figure that cast-member attendants can interact with, inquiring about the price of specific items. A bust of Dok-Ondar was later displayed during Celebration Chicago.
Within the Star Wars canon, Dok-Ondar received his first mention in the 2018 Star Wars Anthology film Solo: A Star Wars Story.
